Zucchini Kimchi

Ingredients
  

  • 2 c Zucchini, cut into 1" chunks
  • 2 tbsp Soy sauce/tamari
  • 2 tbsp Minced garlic
  • 1 tbsp Olive oil

Method
 

  1. In a medium fry pan over medium heat, add the olive oil and saute the garlic until slightly brown.
  2. Spread the olive oil/garlic mixture around and add the zucchini.
  3. Saute until the zucchini are slightly soft.
  4. Mix in the soy sauce/tamari to finish.
