Potato kimchi (banchan) elevates yellow potatoes (or other) to sweet and savory. Keep the small dish presentation of banchan in mind while cubing the potato. This is a simple take on gamja jorim.

Potato Kimchi

Ingredients
  

  • 3 Yellow potatoes, peeled, sliced into 1” cubes
  • 1 tbsp Olive oil
  • 1 tbsp Soy sauce/tamari
  • 1 tbsp Honey
  • 1/2 c Water
  • 2 tsp Sesame oil
  • 1/2 tsp Sesame seeds

Method
 

  1. Over medium heat in a non-stick or coated pan, lightly saute the potatoes in olive oil for 5 minutes, stirring to prevent sticking.
  2. Mix soy sauce/tamari, honey, and water.
  3. Mix the liquid into the potatoes, cover, and cook another 5-10 minutes, until potatoes are pierceable by fork but not mushy.
  4. Add sesame oil to coat.
  5. Serve with sesame seeds.
