Potato kimchi (banchan) elevates yellow potatoes (or other) to sweet and savory. Keep the small dish presentation of banchan in mind while cubing the potato. This is a simple take on gamja jorim.

- Over medium heat in a non-stick or coated pan, lightly saute the potatoes in olive oil for 5 minutes, stirring to prevent sticking.
- Mix soy sauce/tamari, honey, and water.
- Mix the liquid into the potatoes, cover, and cook another 5-10 minutes, until potatoes are pierceable by fork but not mushy.
- Add sesame oil to coat.
- Serve with sesame seeds.
